My cupcakes! version 1.1

Trial number 2. After prototyping a few over a previous weekend. These are the cupcakes I gave my sister on her birthday!


For the cakes

  • 175g self-raising flour
  • 175g butther, at room temperature
  • 175g caster sugar
  • 3 large eggs
  • 45ml espresso coffee
  • 75g nuts, pecans prob

For the icing:

  • 100g butter
  • 200g cream cheese
  • 500g icing sugar

Preheat the oven to 180C. Whisk the flour, butter, sugar and eggs together in a large bowl, until smooth and fluffy.  Add the nuts at this stage. Place the mixture into the cake cases set. Bake for 15 mins or when they are ready.

For the icing: Cream cheese and butter mixed together first and then add the sugar.

Spread over the cupcakes
